Cottage Cheese Pancakes with Blueberry Syrup

Ingredients


For the Pancakes

  • 1 cup low-fat cottage cheese

  • 1¼ cups all-purpose flour

  • 2 teaspoons baking powder

  • 3 large eggs

  • 2 tablespoons whole milk

  • 2 tablespoons unsalted butter, melted

  • 1 tablespoon pure maple syrup

  • 1 teaspoon vanilla bean paste *
     

For the Blueberry Syrup

  • 2 cups fresh blueberries* (frozen work too)

  • ½ cup granulated sugar

  • 1 cup + 2 tablespoons water, divided

  • 1 tablespoon cornstarch


    *You can substitute 1 teaspoon vanilla extract, but if you have vanilla bean paste I highly recommend using it- it adds a richer, more authentic vanilla flavor. You can purchase the one I use here.

Instructions

Make the Pancakes

  1. In a blender, combine the cottage cheese, eggs, and milk until smooth. (I usually use my NutriBullet unless I'm doubling the recipe.)

  2. In a large mixing bowl, whisk together the flour and baking powder.

  3. Pour the blended cottage cheese mixture into the dry ingredients. Stir in the melted butter, maple syrup, and vanilla bean paste until just combined. Be careful not to overmix.

  4. Heat a nonstick skillet or griddle over medium heat.

  5. Scoop about ¼ cup of batter for each pancake. Cook just like traditional pancakes, flipping when bubbles begin to form and the edges start to set. I typically cook mine for about 2 minutes per side, or until golden brown.

  6. Serve warm with the homemade blueberry syrup.

Make the Blueberry Syrup

  1. In a small saucepan, combine the blueberries, sugar, and 1 cup of the water.

  2. Bring to a boil, then reduce the heat to low. Simmer for 10 minutes, stirring occasionally.

  3. While the syrup simmers, whisk together the cornstarch and the remaining 2 tablespoons water in a small bowl until smooth.

  4. Remove the saucepan from the heat and slowly stir in the cornstarch slurry.

  5. Let the syrup sit for about 10 minutes to thicken before serving.

I love serving the syrup just as it is with the whole blueberries, but if you prefer a smoother syrup, simply blend it before serving.
